Grilled Lamb Chops With Rosemary

Of all my garden herbs, only my rosemary bush has survived this summer’s incredible drought, and this Lamb Chop and Rosemary recipe is so popular.

Finely cut 30 rosemary leaves and mix with 2 tbsp olive oil, 1 finely chopped clove of garlic and half a teaspoon of cracked pepper.

Coat 9 lamb chops with this marinade, then cover them with plastic film and marinate in the fridge for at least 2 hours.

Grill the lamb chops, season with salt and a few drops of lemon juice and serve with a mixed salad.

It serves 3 to 4 people.

Beetroot, Chick Pea And Yoghurt Salad

Parents of teenagers looking for vegetable dishes that everyone likes, will be happy with this Beetroot, Chick Pea and Yoghurt Salad.

Peel 3 medium beetroots and cut them into cubes.  

Place them in a bowl with half a cup of peeled, seeded and cubed cucumber, 2 diced tomatoes and about 1 cup of drained, cooked chick peas.

Add 4 tbsp natural yoghurt, 1 tbsp red wine vinegar, a little salt and pepper and 2 tbsp finely sliced dill, and toss together gently.

Serve with some good bread.  It’s nourishing and serves 3 to 4 people.

Grilled Capsicum Salad

I’d like to share with you this Grilled Capsicum Salad, which is always very popular.

Place 4 washed red capsicums in a roasting tray.  

To remove the skin, place the capsicums under a hot grill about 5 cm from the heat, and when the top half of the skin has lightly darkened, turn the capsicums over to darken all the sides.

Place the darkened capsicums into 2 paper bags, seal the bags and leave the capsicums to cool in the bags for 10 minutes.

Open the bags carefully to let the steam escape, then peel and seed the capsicums, and cut each one into 6 pieces.

Place the pieces in a dish with about 100g of cubed fetta cheese, 1 red onion cut into rings and a few black olives.  

Drizzle with a little extra virgin olive oil and a squeeze of lemon juice.

It serves 4.

Fish Fillets With Tomato And Olives

Fish with tomato and olives is a marriage made in heaven.

Slice 2 medium tomatoes. Place them on a greased oven sheet and season with a little salt, pepper, olive oil, and a dusting of grated parmesan.
