Chicken Burgers
We often forget that we can make burgers using all types of mince, and chicken burgers are popular with children.
In a bowl:
• Mix a quarter of a finely chopped brown onion with 500 grams minced chicken
• 2 tablespoons of dried bread crumbs
• 2 or 3 tablespoons of chopped parsley
• 2 tablespoons of Italian-style tomato sauce
• a little salt and pepper
• and 1 tablespoon of cold water.
Mix very well by hand.
Divide the mixture into four, shape 4 fairly flat burgers and coat them with a little plain flour.
Heat 1 tablespoon of olive oil in a non-stick pan and cook the burgers for 3 to 4 minutes on each side.
Serve with tomato sauce, of course!
Steak Diane
I haven’t seen it in a restaurant for a long time, but Steak Diane is an old favourite.
Cut a 300 gram piece of eye fillet steak into 6 slices, each about 2 centimetres thick.
Cook the steaks in a hot, oiled non-stick pan for about 2 minutes on each side.
Transfer the steaks to warm plates and cover with foil.
Add 1 finely cut spring onion and 4 sliced mushrooms to the pan and cook on high heat for 2 minutes.
Add 2 tablespoons of red wine, then a quarter of a cup of beef stock and bring to the boil.
Stir in 1 teaspoon of corn flour mixed with 1 tablespoon of water and bring to a simmer.
