KEVIN AND JANE'S KITCHEN

Terrific ingredients go to make this a deliciously simple meal for the family – or just YOU!

Thanks Sharna for sharing it with Kevin and Jane.

Ingredients:

4 X 150g raw chicken breasts (no skin)
½ cup diced lean ham
½ cup thinly sliced mushrooms
½ cup thinly sliced capsicum
½ cup chopped shallots or onion
½ cup diced tomato
1 teaspoon crushed garlic
½ teaspoon dried basil
4 dessert spoons tomato paste
1 cup grated light mozzarella cheese
drained pineapple pieces (optional)

PREPARATION

Step 1
Preheat oven 180°C.

Step 2
Flatten chicken breast with meat mallet.

Step 3
In a medium size mixing bowl mix together ham, mushrooms, capsicum, shallots, tomato, garlic, basil (and pineapple pieces if wanted).  

Step 4
On a baking tray that has been coated with cooking spray place raw flattened chicken then spread 1 dessert spoon of tomato paste over each breast.

Step 5
Spread pizza topping evenly over each chicken breast. Sprinkle ¼ cup of cheese over each breast. Bake 30- 40 minutes or until chicken is cooked and topping is golden brown.
