Terrific Tomatoes
KEVIN AND JANE'S KITCHEN
Try these tasty dishes while tomatoes are so plentiful!
Roza’s Hungarian Simmered Tomatoes and Capsicum
This is a tasty and simple traditional recipe from Roza’s homeland. Adjust quantities to suit your needs.

• Chop onions and brown in oil.
• Chop fresh tomatoes and yellow, green and red peppers.
• Cook in a pot for 5 – 10 minutes.
• Add 1 teaspoon of red paprika, salt to taste.
• Simmer for 20 – 25 mins.
Elva’s Tomatoey Cheesey Layers
Elva assures us this is fabbo with mashed potato!

• Line a pyrex pie dish with alternate layers of sliced onion, zucchini and tomato.
• Cover with foil and cook in a moderate oven for 20 minutes.
• Then, sprinkle grated tasty cheese on top and return to oven for long enough to melt the cheese.
Norma’s Green Tomato Pickle

Norma’s friends and family call her “The Pickle Lady”. For the past 20 years, she’s earned that nickname by whipping up batches of this delicious recipe.
If you don’t have a big boiler to fit nearly 10 kg of ingredients, just scale the recipe down to suit or cook in two batches.
Ingredients:
5 ½ kg green tomatoes
2 ½ kg onions
1 ½ kg sugar
½ cup salt
2 tbs cornflour
1 tbs mustard powder
1 tbs curry powder
2 tsp turmeric
1 bottle Wild’s Ezy Sauce (available at most supermarkets)
Method:
• Cut tomatoes into cubes, dice onions, combine with salt (well mixed through) and allow to stand overnight.
• Using a big boiler with a solid bottom, bring the tomatoes and onions to the boil.
• Stir in the sugar and the bottle of Ezy Sauce, return to boil and simmer for 2 – 2 ½ hours, stirring occasionally to prevent sticking.
• Mix the cornflour, mustard and turmeric with enough water to make a paste.
• Add paste slowly to the tomato mixture and allow to cool.
• Pour into sterilized bottles and seal well.
