Super strawberry recipes

KEVIN AND JANE'S KITCHEN

Strawberries are in season, so try these mouth-watering serving suggestions.


Lorraine’s Microwave Rhubarb and Strawberry Jam

Ingredients:
3 cups chopped rhubarb
500 grams strawberries (cut in half)
A little finely grated lemon rind
1/3 cup lemon juice
2 ½ cups sugar

Method:
•  In a microwave dish, combine all ingredients but sugar.
•  Microwave on high for 6 minutes, stopping to stir once.
•  Add the sugar, stir in thoroughly.
•  Microwave for 30 minutes, stopping to stir three times.
•  Pour into sterilized jars.
•  When cool, refrigerate.
•  Will keep for two months.

Janine’s Spinach Salad with Strawberries

Ingredients for salad:
Spinach (or romaine lettuce)
1 – 2 cans mandarin segments (or equivalent fresh if available)
Mozzarella cheese to taste
Slivered almonds
Cranberries
Punnet of strawberries

Dressing:
1 cup sugar
2 tbs mustard
½ medium red onion chopped
¾ cup apple cider vinegar
2 cups canola oil
2 tbs poppy seeds

•  Combine all dressing ingredients in a blender. You’ll make more than you need, so you can either halve the dressing quantities or store the excess.

Maria’s Strawberries with Marsala

It’s simple and delicious:
•  Use a punnet of strawberries, halved.
•  Sprinkle with caster sugar.
•  Pour on marsala.
•  Chill … then serve with ice cream.
