Vanilla Almond Slice

KEVIN AND JANE'S KITCHEN

Slices are perfect portable sweets, great for outdoor picnics and kids school snacks.

They can be cut as big or small as you like and most freeze fantastically well - perfect to defrost and have on hand for unexpected visitors!

Anne’s Vanilla and Almond Slice

Ingredients:
1 packet vanilla cake mix (just homebrand will do)
½ cup coconut
4 ounces butter, melted
Jam
Flaked almonds

Method:
•  Line a swiss roll tin with the mixture.
•  Spoon jam of your choice on top.
•  Sprinkle with flaked almonds.
•  Bake in a moderate oven for 30 mins.

 

Christine’s Mars Bar Slice

Method:
•  Melt 3 Mars Bars with 3 tablespoons of butter.
•  Stir in 3 cups of Rice Bubbles.
•  Flatten out the mixture and refrigerate until set. YUM!!!

 

Annette’s Peanut and Sultana Slice

Ingredients:
185 gm butter, melted
½ cup caster sugar
½ cup sultanas
1 cup raw peanuts (not salted), crushed with a rolling in a bag
1 cup coconut
1 cup plain flour

Method:
•  Melt the butter and caster sugar, mix together.
•  Add the sultanas, crushed peanuts, coconut ad flour, stirring to combine.
•  Press into a slice tin and bake for 30 mins in a moderate oven.
•  Cut into slices… and enjoy!


Val’s Apricot Meringue Slice

Ingredients for base:
250 g butter
½ cup sugar
½ teaspoon vanilla essence
1 egg
1 cup plain flour
½ cup self raising flour

Ingredients for apricot filling:
1 packet (approx. 275 gm) dried apricots
1 tablespoon sherry
½ cup boiling water
2 tablespoons sugar

Ingredients for meringue:
2 egg whites
½ cup caster sugar
½ cup dessicated coconut

Method:
•  To make the base, cream the butter and sugar, then add the egg and flour.
•  Place in a tray and cook in a moderate oven for 20 mins.
•  Soak the apricots for about an hour in the boiling water with the sherry and sugar
•  Prepare the meringue by beating together the egg whites, caster sugar and coconut.
Now, it’s easy.
•  Spread the base with the apricot mix, top with the meringue and bake in a moderate oven for 15 minutes.

 

Sheila’s Coffee Strudel Slice

Ingredients for base:
125 gm butter
¼ cup sugar
1 cup plain flour
¼ cup self raising flour

Ingredients for filling:
1 x 400 gm tin condensed milk
30 gm butter
2 tablespoons golden syrup
3 teaspoons instant coffee powder
½ cup walnuts

Ingredients for topping:
1 cup plain flour
2 teaspoons cinnamon
1/3  cup brown sugar
125 gm butter

Method:
•  Cream the butter and sugar and stir in flour to make a dough.
•  Press down into a slice tray and bake for 10 mins in a moderate oven.

Method for filling:
•  Mix together condensed milk, golden syrup, butter and coffee and heat in a saucepan over a gentle heat until it thickens.
•  Remove from the stove and add nuts.
•  Spread filling over the base.

Method for topping:
•  Rub the butter into the other ingredients to make a dough, wrap it in gladwrap and cool mixture in the fridge to harden.
•  Grate the hard topping over the filling.
•  Bake for 10 mins in moderate oven.
•  Cool slightly before cutting.

  • Anne's Vanilla & Almond slice sounds lovely (and easy) but the ingredients listed include coconut & melted butter which are not listed in the method. Do they form part of the almond topping or are they mixed into the base?
