Sensational Salads
KEVIN AND JANE'S KITCHEN
Keep cool as a cucumber with these yummy salads.
Helga’s Lentil and Vegetable Salad
• One can of lentils, rinsed and drained.
• Finely chop: 1 small red capsicum, 1 stick celery, 1 small Lebanese cucumber and ½ a medium red onion.
• Add: 1 grated medium sized carrot, 150 grams baby spinach, a punnet of halved cherry tomatoes, and some chopped parsley
• Season with salt and pepper to taste.
• Add 2 tablespoons balsamic vinegar and a dash of red wine vinegar.
Toss… and enjoy!
Tayna’s Easy Potato Salad
• Scrub potatoes (no need to peel) and cut into bite-sized pieces.
• Steam potatoes for about 5 minutes (or until cooked but firm).
• Stir in dip (nstead of mayonnaise): use either a crunchy basil/cashew dip, or roast capsicum dip.
• Add chopped capsicum: for contrast, use red capsicum with a green dip, or green capsicum with a red dip.
It’s yummy and different!!
Gail’s Seafood Pasta Salad
• Cook pasta shells.
• Chop spring onions, 3 sticks celery and 1 capsicum (either red or green).
• Add 1 tin of diced capsicum and 250 gm seafood extender.
• Mix together with your favourite mayonnaise.
Luba’s Ukrainian Beetroot and Potato Salad
• Boil potatoes and beetroot whole with skin on.
• When cool, remove skin and chop into bite sized pieces.
• Add chopped chives, spring onion and diced pickled gherkins.
• Mix in olive oil, season with salt and pepper.
Perfect with chicken satays!
