Lindsay’s Simply Sensational Salmon

KEVIN AND JANE'S KITCHEN

It’s lovely served with mixed greens or wilted spinach and Lindsay’s wife also makes up a little mix of yoghurt and mint leaves to serve as a condiment.

Yummy!!

Ingredients:

2 Salmon steaks
1/2 cup orange juice
1/3 cup maple syrup
Grated ginger
Clove garlic (crushed)

PREPARATION

Step 1
Mix orange juice, maple syrup, grated ginger and garlic and simmer for around 10 minutes, or until nice and syrupy.

Step 2
Pour half of the syrup mixture over the salmon in an oven tray.

Step 3
Cook for 10 – 15 minutes in a hot oven, basting occasionally with the remainder of the syrup. The salmon will be just slightly crispy on top when it’s cooked.
