Christmas Cheer!

Christmas Pudding

KEVIN AND JANE'S KITCHEN

Individual Christmas puds make the perfect gift.

Thanks to Val of Pakenham for sharing her recipe.

Val’s Christmas Pudding

Makes one full pudding – or 12 little individual puddings.

Ingredients:
200 g raisins
150 g (1 cup) brown sugar
200 g sultanas
125 g butter
100 g currants
1 teaspoon Bicarb Soda
50 g mixed peel
1 teaspoon vanilla essence
100 g chopped dates
2 eggs
100 g chopped prunes
100 g glazed cherries
1 cup self raising flour
teaspoon mixed spice
1 cup plain flour
teaspoon cinnamon
teaspoon nutmeg
230 ml (1 cup) water OR brandy or rum at cook’s discretion

PREPARATION:

•  Place dried fruits, butter, sugar and water (or brandy) in a saucepan.
•  Stir over low heat until boiling and simmer 6 minutes, stirring occasionally.
•  Remove from heat. Stir in soda, then leave until cold.
•  Beat eggs, then add eggs, vanilla & cherries to the mixture.
•  Mix in all sifted flours and spices.

To steam, for one standard size pudding:
•  Place in greased pudding basin.
•  Cover with baking paper & foil, tie with string or use a bottle rubber ring.
•  Steam for 4 hours.
•  When cold, remove from basin, wrap in brown paper & store in refrigerator.
•  To serve, return to basin and steam for 1 hour.

OR for individual one-serve puddings:
•  Divide mixture evenly between 12 tiny individual pudding containers and steam for 1 hour only

Val re-uses the bowls from individual packaged puddings available at supermarkets. You can also buy individual heat-proof plastic pudding containers at good cooking stores like the Mixing Bowl in Hallam and Camberwell.
